Roast Veal with Cream and Paprika

Ingredients:
1 largeveal fillet for roasting (abt 2 lbs)
2 tbsppaprika
1/2 cupwhite wine
4 tbspbutter
1 cupcream
xsalt and pepper
Procedures:
1Preheat oven to 400 F (or 180 C).
2Season the veal with salt and pepper. Transfer to a greased baking dish. Season generously with 1/2 of the paprika, then coat well with butter.
3Let the veal roast in the oven for 60 - 90 minutes, until medium-well.
4Turn off the oven and remove the roast veal.
5Transfer the drippings to a small sauce pan. Add the wine, mix and bring to a quick boil.
6Stir in the cream and the other half of paprika. Let it simmer for 1-2 minutes. Season with salt and pepper and thicken with some cornstarch diluted with water, if desired.
7Pour sauce at the bottom of a large serving dish. Place roast veal at the center, then surround with steamed rice and green stringbeans.
