| x | beef sirloin steaks, abt 1/2 lbs ea | | x | salt and pepper | | 1/4
| lbs | roquefort cheese | | 1/4
| lbs | butter | | 1/4
| lbs | coursely chopped assorted nuts | | 1
| x | shallot, peeled and chopped |

Procedures:
| 1 | Season sirloin steaks with salt, paprika and pepper. Rub with cooking oil, then grill over high heat. Cook each side for 3-5 minutes, according to desired doneness. | | 2 | Saute chopped shallots in butter in a small saucepan. | | 3 | Add the chopped nuts and crumbled roquefort cheese.
