Ingredients:
| 4
| slice | white bread | | 2
| tsp | butter | | 1/4
| cup | flour | | 3/4
| cup | milk | | 2
| slice | fillet of trout or any white fish | | 1/2
| cup | grated mozarella or gruyere cheese | | 2
| tsp | margarine | | x | salt, pepper and paprika |

Procedures:
| 1 | Preheat oven to 400 F. | | 2 | Spread margarine on half of the bread slices. | | 3 | On the other half of the bread slices, sprinkle grated cheese and top with a dash of ground black pepper. | | 4 | Place all bread slices on a baking tray, then bake in the oven using top heat, until the cheese is bubbly (about 2-3 minutes). | | 5 | Poach fish in salted water, cook for about 5-6 minutes. | | 6 | Make a white sauce by melting the butter in a small sauce pan over medium heat. | | 7 | Add the flour, then mix and let it cook for 2-3 minutes. | | 8 | Pour in the milk, the mix well. Season with salt and pepper. Let the sauce cook over low heat until it thickens. | | 9 | Add the poached fish fillets to the white sauce and let it cook for about 2 minutes. | | 10 | Place fish fillets and some white sauce on the toasted bread slices with margarine. Sprinkle with paprika, then top with the toasted bread with melted cheese to make a sandwich. |
