Ingredients:

| lbs | potatoes | | 3
| x | egg yolks | | 1
| tbsp | butter | | 1
| tsp | chopped garlic | | 2
| tsp | chopped parsley | | 2
| tbsp | flour | | 1
| x | egg, beaten | | 1
| cup | bread crumbs | | x | salt, pepper and ground nutmeg |

Procedures:
| 1 | Peel the potatoes, then roughly cut into small pieces (about 1.5 inch cubes). | | 2 | Boil the potato cubes in salted water until cooked. Remove and drain. | | 3 | Crush potatoes in a food processor at low speed. Add egg yolks, butter, chopped garlic and parsley and mix well. Season with salt, pepper and a dash of nutmeg. The mixture will resemble a soft dough. Set aside to cool for about an hour. | | 4 | Form small circular patties, then coat with flour. Dip the patties in egg, then coat with bread crumbs and deep fry for about 3-6 minutes, until golden brown. | | 5 | Remove from the fryer, then drain on paper towels. | | 6 | Garnish with chopped parsley if desired. |
