Potato Croquettes

Ingredients:
1 1/2 lbspotatoes
3 xegg yolks
1 tbspbutter
1 tspchopped garlic
2 tspchopped parsley
2 tbspflour
1 xegg, beaten
1 cupbread crumbs
xsalt, pepper and ground nutmeg
Procedures:
1Peel the potatoes, then roughly cut into small pieces (about 1.5 inch cubes).
2Boil the potato cubes in salted water until cooked. Remove and drain.
3Crush potatoes in a food processor at low speed. Add egg yolks, butter, chopped garlic and parsley and mix well. Season with salt, pepper and a dash of nutmeg. The mixture will resemble a soft dough. Set aside to cool for about an hour.
4Form small circular patties, then coat with flour. Dip the patties in egg, then coat with bread crumbs and deep fry for about 3-6 minutes, until golden brown.
5Remove from the fryer, then drain on paper towels.
6Garnish with chopped parsley if desired.
