Beef Entrecote

Ingredients:
1 largebeef sirloin - about 3/4 lbs
1 tspcooking oil
2 tbspbutter
1 tspflour
2 xshallots, peeled/ sliced into rings
1/2 cupred wine
xsalt and pepper for seasoning
Procedures:
1Season the beef with salt and pepper.
2Heat oil and butter in a large pan. Add the steak and sear both sides using high heat, about 3-4 minutes on each side.
3Remove the steak, then saute the shallots in the same pan for about 2 minutes.
4Add the flour, then pour in the wine and simmer for about 10-12 minutes.
5Pour over the steak. Garnish with parsley if desired.
6Serve with baked potatoes and salad.
