Veal Medallions with Mushrooms

Ingredients:
1 1/2 lbsveal loin, sliced into 1 thick medallions
2 tbspbutter
50 gramsdried mushrooms, (Ex. Chanterelle, Morel, etc.)
1 tbspchopped shallots
1 tbspbutter
1 cupprepared gravy(canned or bottled)
1 tbspcognac
Procedures:
1Season the veal medallions with salt and pepper.
2Pan-fry with butter in high heat until medium. Set aside.
3Soak mushrooms in water for 3-4 hours, until soft.
4In aauce pan, saute chopped shallots in butter over medium heat.
5Add mushroom and continue stir-frying for about 1-2 minutes.
6Add prepared gravy, simmer for 3-4 minutes.
7Stir cognac. Remove from heat.
8spoon sauce and mushrooms on serving plates. Arrange veal medallios on top.
9Garnish with parsley if desired.
