Ingredients:
| 1 1/2
| lbs | veal loin, sliced into 1 thick medallions | | 2
| tbsp | butter | | 50
| grams | dried mushrooms, (Ex. Chanterelle, Morel, etc.) | | 1
| tbsp | chopped shallots | | 1
| tbsp | butter | | 1
| cup | prepared gravy(canned or bottled) | | 1
| tbsp | cognac |

Procedures:
| 1 | Season the veal medallions with salt and pepper. | | 2 | Pan-fry with butter in high heat until medium. Set aside. | | 3 | Soak mushrooms in water for 3-4 hours, until soft. | | 4 | In aauce pan, saute chopped shallots in butter over medium heat. | | 5 | Add mushroom and continue stir-frying for about 1-2 minutes. | | 6 | Add prepared gravy, simmer for 3-4 minutes. | | 7 | Stir cognac. Remove from heat. | | 8 | spoon sauce and mushrooms on serving plates. Arrange veal medallios on top. | | 9 | Garnish with parsley if desired. |
