Ingredients:

| tbsp | vegetable oil | | 1/2
| | small red cabbage, shredded | | 1
| dl | white or red wine | | 2
| | green apple, peeled and quartered | | 1
| tsp | lemon juice | | 200
| grams | emmental cheese (or preferred) cut in cubes | | | Sauce: | | | salt, pepper | | | a little nutmeg | | 1/2
| tsp | mustard | | 2
| tbsp | red wine vinegar | | 1
| tsp | Balsamico vinegar | | 6
| tbsp | sunflower oil | | 1
| tbsp | pistachios, chopped (optional) |

Procedures:
| 1 | Saute the shredded red cabbage in oil for about 1-2 minutes. | | 2 | Deglaze with wine and cook until slightly crunchy. Remove from heat and let cool. | | 3 | Mix the cabbage, apples, and lemon juice. | | 4 | Add cheese. | | 5 | Mix all ingredients for the sauce and pour on salad. Garnish with chopped pistachios if desired. | | 6 | You can replace the apples with oranges or even pineapples. |
