Beef and stout casserole

Ingredients:
1 1/2 lbsBeef
6 ozLean bacon, cubed
1 lbsShallots or small onions
3 Cloves garlic
1 Bouquet garni
1 tbspSugar
Salt and pepper
Basil and parsley
1 tbspButter
2 tbspFlour
1 tbspWine or cider vinegar
1 Bottle of stout
Procedures:
1Saute the beef and bacon in a little oil.
2Drain off the excess liquid.
3Remove the meat anmd set aside.
4Add the butter to the pan, and melt.
5Stir in the flour to make a roux.
6Gradually stir in the stout.
7Place the meat and the small onions (peeled) in a deep casserole dish, and season with the salt, pepper and herbs.
8Crush the garlic and add to the ingredients.
9Sprinkle the sugar on top, and pour in the sauce.
10Cover and place in the oven.
11Cook very gently for up to 3 hours at 300°F.
12Check occasionally.
13If the casserole seems to be drying a little, you can add more stout.
14Remove from the oven and mix in the vinegar.
15Serve with lots of boiled potatoes to sop up the sauce
