Tangy Taramasalata

Ingredients:
2 1/2 slices white bread, crust removed
1/2 cupmilk
2 garlic cloves, finely chopped
1/4 fresh lemon juice
4 ozsmoked cod roe, skinned
1/4 cupolive oil
Procedures:
1Put bread in a shallow bowl, add milk and set aside to soak for 5 minutes
2.Transfer bread and milk to a food processor. Add garlic, lemon juice and cool roe. Process until smooth.
3With motor running, add oil, at first drop by drop, and then in a steady stream. Spoon mixture into a bowl, cover and chill for at least 30 minutes before serving. Serve with French bread or pita and garnish with fresh dill if desired.
