Ingredients:

| cup | Butter, melted | | 2

| lbs | lean ground pork(85% lean) | | 1/2
| cup | Onion, finely chopped | | 3
| | Garlic Cloves, finely chopped | | 1
| tsp | Ground Black Pepper | | 2 1/2
| tsp | Oregano, dried | | 1/2
| tsp | Salt | | | ********** | | 2
| cups | Spinach(cooked, cooled), finely chopped | | 1
| cup | Feta cheese, crumbled | | 2
| tbsp | Lemon juice | | | ********** | | 12
| | Phyllo Sheets, room temperature |

Procedures:
| 1 | Heat olive oil over medium heat in a frying pan, add Pork and fry. | | 2 | Break up meat for approximately 10 minutes or until the pink color has disappered; pour off fat. | | 3 | Add onions and garlic, cook for 3-4 minutes; add seasoning, remove mixture to a bowl and cool. | | 4 | When the mixture is cool, add spinach, feta cheese and kemon juice; mix well. | | 5 | Unroll phyllo dough from left to right, cut the pile of sheets in half, remove the pile on the left and preserve for another use. | | 6 | Place approximately 3 heaping tbsp. of filling in a row along the edge of dough closest to you, leaving 5 cm (2 inch), and a 2.5 cm (1inch) border on each side. Brush melted butter lightly on the remaining dough surface. Fold the 5 cm (2 inch) border over the filling and roll over once, fold each end over the roll (to close the roll), and roll up firmly. | | 7 | Repeat procedure with remaining filling. | | 8 | Rolls maybe frozen on a tray for future use. | | 9 | To bake, place rolls on a paper lined tray, brush rolls lightly with melted butter, bake at 250°C(400°F) for approximately 10 minutes or until golden. | | 10 | . .
