Pork Rolls with Spinach and Feta Cheese

Ingredients:
1/3 cupButter, melted
2 tbspOlive Oil
1 lbslean ground pork(85% lean)
1/2 cupOnion, finely chopped
3 Garlic Cloves, finely chopped
1 tspGround Black Pepper
2 1/2 tspOregano, dried
1/2 tspSalt

2 cupsSpinach(cooked, cooled), finely chopped
1 cupFeta cheese, crumbled
2 tbspLemon juice

12 Phyllo Sheets, room temperature
Procedures:
1Heat olive oil over medium heat in a frying pan, add Pork and fry.
2Break up meat for approximately 10 minutes or until the pink color has disappered; pour off fat.
3Add onions and garlic, cook for 3-4 minutes; add seasoning, remove mixture to a bowl and cool.
4When the mixture is cool, add spinach, feta cheese and kemon juice; mix well.
5Unroll phyllo dough from left to right, cut the pile of sheets in half, remove the pile on the left and preserve for another use.
6Place approximately 3 heaping tbsp. of filling in a row along the edge of dough closest to you, leaving 5 cm (2 inch), and a 2.5 cm (1inch) border on each side. Brush melted butter lightly on the remaining dough surface. Fold the 5 cm (2 inch) border over the filling and roll over once, fold each end over the roll (to close the roll), and roll up firmly.
7Repeat procedure with remaining filling.
8Rolls maybe frozen on a tray for future use.
9To bake, place rolls on a paper lined tray, brush rolls lightly with melted butter, bake at 250°C(400°F) for approximately 10 minutes or until golden.
10. . Serve with lemon wedges.
