Ingredients:
2 cupWater
1 tbspActive dry yeast
2 lbsPlain white flour
1 tspSalt
1 tspGarlic powder
10 tbspOlive oil
2 tbspCornmeal
Procedures:
1In a small bowl, mix a heaping tablespoon of active dry yeast with water. Set aside.
2In a large mixing bowl, sift the white flour, salt, and garlic powder. Mix well.
3Slowly add the yeast mixture and the olive oil. Mix well to form a dough. Knead until the dough is smooth, adding more flour if necessary.
4Place the dough in a large bowl and cover with a damp cloth. Leave the dough to rise in a warm place (about 70 - 80 degrees Farenheit) for about 45 minutes.
5Punch the dough down and knead again for 2-3 minutes. Pat the dough and shape to an 18 inch square. Cut the dough in half to form two 9 X 18 inch rectangles. Cut each rectangle to form sticks of about 9 X 1/2 inch per stick. Use your palms to roll, stretch and form each piece to a narrow stick - about a foot long each.
6Preheat the oven to 350 degrees Farenheit.
7Dust baking trays with the cornmeal. Arrange the breadsticks on the baking tray, making sure that each stick is about an inch apart from each other. Rest in room temperature for about 10 minutes, then place in the oven to bake for 20 - 30 minutes until the breadsticks are done.
8Remove from oven and cool on wire racks for 10 minutes.
9Makes 70-80 breadsticks.
10Serve plain or with cheese and garlic dips.
11For an "Italian" flair, add 2 teaspoons of dried Italian herbs instead of the garlic powder.
