Tomato Cream Soup with Basil and Gin

Ingredients:
2 tbspOlive Oil
2 tspGarlic, chopped
4 tbspWhite onions, chopped
1 tbspTomato paste
2 lbsTomato concasse
2 Tomatoes, large
1 xSalt
1 xPepper
1 tspBasil leaves, chopped
4 tbspCream, whipping
4 tbspGin
2 tbspSour cream
8 Basil leaves, fresh
Procedures:
1Slice the two large tomatoes. Remove the seeds and slice into half-inch cubes.
2Saute onions and garlic in olive oil.
3Add the tomato paste.
4Add the tomato concasse and chopped basil leaves.
5Bring to a boil and season with salt and pepper.
6Reduce heat and simmer for 10 minutes.
7Blend with a small hand blender.
8Stir in cream and gin.
9Pour into six soup dishes.
10Garnish with a spoon of sour cream and a basil leaf.
