Ingredients:
1/3 cupButter or margarine
1 cupChopped mushrooms
2 largeOnions, finely chopped
1/4 cupChopped green bell pepper
3 cupGrated carrots
1 1/2 cupChopped celery
1/2 cupSunflower seeds
3/4 cupCoarsely chopped walnuts
5 Eggs, beaten
3 cupWhole wheat bread crumbs
- (soft)
1 dashDried basil
1 dashDried oregano
Salt, pepper
Procedures:
1Melt butter in skillet.
2Add mushrooms, onions and green pepper and cook until tender but not browned.
3Combine mushroom mixture in bowl with carrots, celery, sunflower seeds, walnuts, eggs, bread crumbs, basil and oregano.
4Mix well.
5Season to taste with salt and pepper.
6Line 9- x 5-inch loaf pan on bottom with waxed paper, then grease paper and sides of pan generously.
7Turn mixture into pan and bake at 325f 1 hour.
8Turn out and carefully peel away paper.
