Ingredients:
2 ozBulgur wheat
1/4 cupCanola oil
1 1/4 cupFinely chopped mushrooms
1 1/2 cupFinely chopped carrots
2 cupFinely chopped onions
2 tbspMinced garlic
3/4 cupWalnuts
1/2 cupSunflower seeds
1/2 cupWheat germ
1/3 cupChopped parsley
2 tbspChopped dill
3 tbspTahini (sesame seed paste)
1 1/4 cupCooked chickpeas
3 tbspTamari
3 tbspLemon juice
1/4 tspCayenne pepper
1/2 tspSalt
3/4 tspFreshly ground pepper
3/4 tspGround cumin
Oil
-for rubbing burgers & grill
Procedures:
1Put bulgar in a bowl of hot water, soak for 10 minutes or until tender,drain.
2heat oil in a skilled, saute mushrooms, carrots, onions, garlic for 15 mins.
3Let cook.
4grind walnuts and sunflower seeds, put into a bowl, add sesame seeds, bulgur, and wheat germ.
5mix sauteed vegetables with parsley, dill, cahini, chickpeas, tamari, lemon juice, cayenne, salt, pepper, and cumin until blended (small lumps ok).
6add to the sesame-bulgur mixture, mix well.
7chill thoroughly to firm the mixture.
8shape into patties, pat with oil, cook 4 minutes on each side, flip carefully with a wide spatula to keep from falling apart.
9serve on toasted rolls with slices of tomato, sprouts, cucumber, yogurt.
10serves 8 to 10, depending upon size of patties/rolls.
11yum, with a nice chopped (medium dice) marinated fresh vegetable salad or coleslaw or carrot slaw.
