Ingredients:
5 medKohlrabi bulbs, peeled &
-- chopped
1/2 cupPearl barley
1 eachOnion, chopped
1 eachCelery rib, sliced
1 eachCarrot diced
1/2 cupMushrooms, chopped
2 tspBasil
2 tspParsley
Salt & pepper
1/2 cupRed wine
1 cupStock
2 cupMashed potatoes
2 cupMashed sweet potatoes
Procedures:
1Place all ingredients, except the potatoes, in a large saucepan & bring to a boil.
2Cover, reduce heat & simmer until the vegetables & barley are tender, about 45 minutes.
3Preheat the oven to 350°F.
4Transfer the cooked mixture to a lightly oiled casserole dish & top with alternate diagonal rows of both kinds of potato.
5(for a more decorative look, try piping the potatoes).
6Bake for 35 to 40 minutes or until the edges bubble & the potatoes are golden brown.
7Serve immediately.
