Ingredients:
3 tbspPeanut or light sesame oil
5 eachGarlic cloves
-- finely chopped
1 tbspGinger, finely grated
3 tbspChinese black beans
3 tbspOnions, coarsely chopped
2 tbspSoy sauce
2 tbspBarley or rice malt
2 cupWater
3 tbspKuzu, dissolved in...
1/3 cupWater
1 lbsFirm tofu, sliced
2 tspDark sesame oil
Procedures:
1In a wok, heat oil until nearly smoking.
2Add garlic and ginger, and stir-fry rapidly over high heat for 1 minute.
3Add black beans, and stir for 30 seconds.
4Add onions, and stir for 2-3 minutes.
5Add soy sauce, sweetener, and water.
6Bring to a boil.
7Add kuzu.
8Stir with a wooden spoon until it thickens and becomes clear and shiny.
9Stir in tofu and dark sesame oil, and simmer 2-3 minutes.
10Serve on rice with blanched chinese greens.
