Ingredients:

| tbsp | Peanut or light sesame oil | | 5

| tbsp | Ginger, finely grated | | 3
| tbsp | Chinese black beans | | 3
| tbsp | Onions, coarsely chopped | | 2
| tbsp | Soy sauce | | 2
| tbsp | Barley or rice malt | | 2
| cup | Water | | 3
| tbsp | Kuzu, dissolved in... | | 1/3
| cup | Water | | 1
| lbs | Firm tofu, sliced | | 2
| tsp | Dark sesame oil |

Procedures:
| 1 | In a wok, heat oil until nearly smoking. | | 2 | Add garlic and ginger, and stir-fry rapidly over high heat for 1 minute. | | 3 | Add black beans, and stir for 30 seconds. | | 4 | Add onions, and stir for 2-3 minutes. | | 5 | Add soy sauce, sweetener, and water. | | 6 | Bring to a boil. | | 7 | Add kuzu. | | 8 | Stir with a wooden spoon until it thickens and becomes clear and shiny. | | 9 | Stir in tofu and dark sesame oil, and simmer 2-3 minutes. | | 10 | Serve on rice with blanched chinese greens. | | 11 | John paino & lisa messinger, "the tofu book" |
