Tofu loaf

Ingredients:
1 tbspOil
2 Garlic cloves, diced
1 Onion, diced
1 Carrot, diced
1 Red bell pepper, diced
1 Celery stick, diced
2 tbspTamari
2 lbsTofu, mashed
4 sliceWholewheat bread
1 tbspOil
1 tbspTamari
1/2 tspGarlic powder
1 cupNutritional yeast
1/2 cupTahini
1/2 tspBasil
1/2 tspOregano
1/2 tspTurmeric
Procedures:
1Heat oil in a skillet, add garlic, onion, pepper, carrot & celery.
2Season with 1 tb tamari.
3Cook till vegetables are tender.
4Remove from heat & put in a large mixing bowl.
5Add mashed tofu.
6Cut bread into crouton sized pieces & quick fry in remaining oil with rest of tamari, garlic powder & 5 tb nutritional yeast.
7Add to tofu mixture.
8Add rest of the ingredients.
9Mix well.
10Place in a well oiled casserole dish & press down very well.
11Bake at 350f for 35 minutes.
12Allow to cool slightly, then turn out on a plate.
13Slice & serve.
14Excellent cold too.
