Ingredients:
2 cupOnions, yellow, diced
2 cupVegetable stock
1 1/2 cupItalian tomatoes, canned
-crushed
1/2 cupCarrots, sliced ? thick
4 cupOkra, sliced ? thick
1 cupRed bell peppers, diced
1 cupGreen bell peppers, diced
1 cupYellow squash, sliced
1/2 cupCorn kernels, fresh
6 Garlic cloves, peeled, sliced
1 tbspCajun Spice
1 tspPaprika
1/2 tspFunugreek
1/4 tspRed pepper flakes
10 ozTofu, pressed, cubed
Salt and pepper
Procedures:
1In a large saucepan, combine the onions vegetable stock, tomatoes, carrots and celery.
2Bring to a boil and simmer for 10 minutes.
3Add the okra, red and green bell peppers, yellow swquahs, corn, garlic, cajun spice, paprika, fenugreek and red pepper flakes.
4Continue simmering for another 10 mintues.
5Add the tofu and simmer an addtional 10 minutes.
6Season to taste with pepper and salt.serve hot.
