Ingredients:
14 ozTofu, firm, drained, rinsed
1 smallOnion, minced
2 largeGarlic cloves, minced
1 tbspCanola oil
2 tbspChili sauce
1 tspWorcestershire sauce, -veget
2 tspSoy sauce, low-sodium
1/2 tspCumin, ground
1 1/4 cupBread crumbs, dry, or
3/4 cupBread crumbs, dry and
1/2 cupHazelnuts, ground
Salt and pepper to taste
Procedures:
1Wrap tofu in a kitchen towel or several layers of paper towels.
2Place on a cutting board, and weight with an iron skillet or wooden cutting board for to 45 minutes.
3Meanwhile, saute onion and garlic in oil until onion is limp and slightly brown on the edges.
4Remove towels and place tofu in a large bowl.
5Mash with a fork and add onion-garlic mixture.
6Add chili sauce, worcestershire sauce, soy sauce, cumin, bread crumbs and hazelnuts if desired; mix well.
7Place in a food processor and pulse to form a uniform texture.
8Add salt and pepper to taste.
9Refrigerate for 30 minutes.
10With wet hands, shape tofu mixture into 8 to 10 patties and place on a well oiled vegetable grill.
11Handle patties gently; they"re delicate.
12Grill for 3 to 4 minutes on each side, until browned.
13Variation: instead of grilling, saute burgers in olive oil until lightly browned on bo sides.
14Note: this burger is especially tasty when served with a spicy sauce made low-sodium soy sauce mixed with chili sauce or barbecue sauce and topped wi sauteed mushrooms.
