| tbsp | Green onions, minced | | 2
| cup | Shiitake mushrooms, sliced | | 2
| tbsp | Oil | | 1
| tsp | Oregano | | 1/2
| tsp | Thyme | | 1/2
| tsp | Basil | | 2
| tbsp | Balsamic vinegar | | 2
| tbsp | Tamari | | 1
| cup | Chickpeas, cooked | | 1
| cup | Couscous, cooked | | 1
| cup | Quinoa, cooked | | 1/2
| cup | Liquid egg substitute | | 1/4
| cup | Spelt flour | | | Black & white pepper, to | | | -- taste | | 1/4
| cup | Breadcrumbs |

Procedures:
| 1 | Heat oil & saute garlic, green onions & shittake mushrooms. | | 2 | Stir in the herbs, vinegar & tamari, & cook for another 3 minutes. | | 3 | Transfer to a blender or food processor. | | 4 | Add the chickpeas & puree. | | 5 | transfer pureed mixture to a large mixing bowl & mix in the couscous & quinoa. | | 6 | Stir in the egg replacer & spelt flour. | | 7 | Season. | | 8 | divide mixture into 4 equal portions & shape into patties. | | 9 | Coat with breadcrumbs. | | 10 | Place in oven & broil until lightly browned on both sides. | | 11 | Serve on buns with any fixings you might desire. | | 12 | "vegetarian gourmet" summer, 1995 |
