1/4 cupChopped green pepper
2 tbspOil
1 cupUncooked long grain rice
1/2 cupTomatoes with green chilies
1/4 tspCumin
1/2 tspSalt
1/4 tspGarlic powder
2 cupWater
2 tbspChopped cilantro (optional)
Procedures:
1In a skillet, saute onion and green pepper in oil for about 2 minutes.
2Add rice and stir until coated with oil.
3Add tomatoes, turmeric, cumin, salt, garlic powder and water; bring to a boil.
4Reduce heat and simmer, covered, about 20 minutes or until liquid is absorbed.
5Add cilantro if desired.
6Yield: 6 servings.
