Ingredients:
1 1/2 cupYellow onion, diced
1/2 cupCarrot, peeled and grated
3/4 cupGreen bell pepper, diced
2 tspChili powder
1 tbspGarlic, crushed
1 tspCilantro, chopped
1/2 tspThyme
1/2 tspCumin seed, ground
1/2 tspSea salt
1/2 tspBlack pepper
1 cupWhole corn, fresh or frozen
1 cupPinto beans, cooked
5 Whole wheat pita, cut in ?/td>
10 Lettuce leaves, chopped
10 Slices tomato, ? thick
Procedures:
1In some water (in a non-stick pan), saute the vegetables (except corn) and spices over medium heat for about 5 minutes.
2Add the corn and cooked beans.
3Continue to cook until the beans and corn are hot.
4Lay the pita on its side.
5Add a slice of tomato, ?cup of the filling and lettuce.
6Serve hot
