Ingredients:
2 eachEggs, beaten
3/4 cupVegetable shortening, melted
2 tbspOnion, chopped
3/4 cupAmerican cheese, grated
2 1/2 cupFlour, all-purpose
2 tbspBaking powder
2 tbspCornmeal
1 1/2 cupMilk
2 tbspBell pepper, chopped
2 tbspPimiento, chopped
3/4 cupCheddar cheese, milk, grated
1 tspSalt
2 tbspSugar
Procedures:
1Mix eggs, milk and shortening.?In another bowl, combine remaining ingredients.?Add milk mixture and stir just to mix (there will be lumps).?Pour into greased muffin cups and bake in preheated 400°F.
