Ingredients:
6 sliceBacon, diced
1/4 cupFlour
1 1/2 tspSalt
1/3 cupDiced green pepper
1/8 tspCayenne pepper
1/8 tspGarlic salt
2 lbsBeef liver, slice ? thick
1 largeOnion, sliced
1 canWhole tomatoes (16 oz.)
1/4 tspChili powder
Cooked rice
Procedures:
1Cook bacon in frying pan until crisp, remove.
2Combine flour and salt.
3Dredge liver in flour mixture and brown lightly on each side in bacon drippings.
4Pour off remaining drippings.
5Add onion, green pepper, tomatoes, cayenne pepper, chili powder and garlic salt.
6Cover tightly and simmer 20 minutes.
7Thicken gravy if desired.
8Sprinkle bacon over top.
9Serve liver and sauce over hot cooked rice
