Ingredients:

| lbs | Blue cheese | | 10
| tbsp | Butter, room temperature | | 1 1/3
| cup | All-purpose flour | | 1/4
| tsp | Cayenne pepper | | 1/2
| cup | Poppy seeds |

Procedures:
| 1 | Preliminaries: adjust oven rack to middle position and preheat oven to 350 degrees. | | 2 | Procedure: in a food processor fitted with the metal blade, cream together the blue cheese and butter. | | 3 | Add the flour and cayenne, processing just to blend. | | 4 | Transfer to a bowl and work in the poppy seeds. | | 5 | Divide the dough in half, wrap in plastic wrap and chill for 30 minutes. | | 6 | Roll each dough half into a 1 inch thick cylinder and refrigerate again until very firm, about 2 hours. | | 7 | Cut the cylinders into ?inch thick slices. | | 8 | Place on ungreased baking sheets and bake in a preheated 350 degree oven for 17-20 minutes, until golden brown. | | 9 | Presentation: serve warm or at room temperature. | | 10 | Store in air-tight containers. |
