Ingredients:
1 lbsUntreated oranges
3 1/2 cupSugar
7 tbspGolden syrup
2 tbspCoarse salt
1/4 tspDried chilies, crushed
6 3/4 cupMalt vinegar
1 lbsOnions, chopped
1 lbsDates, stoned and chopped
1 lbsRaisins
Procedures:
1Grate the orange zest and set aside.
2Remove the pith from the oranges and discard the seeds.
3Finely chop the orange flesh.
4In a large, stainless steel saucepan, combine the sugar, syrup, salt, chilies, and vinegar.
5Bring to a boil over high heat, stirring to dissolve the sugar.
6Add the oranges, onions, dates, raisins, and half the grated zest.
7Reduce the heat and simmer until thick, about 1 hour.
8Stir in the remaining orange zest.
9Spoon into warm, sterilized jars.
10Leave to cool, then seal.
11Store in a cool, dark place.
