Ingredients:
2 cupUnsalted popped corn
3 Egg whites
1/2 tspBaking powder
1/4 tspSalt
1/4 tspCream of tartar
2 tbspGranulated sugar replacement
Procedures:
1Place popped corn in food processor or food grinder.
2Grind into kernel-size pieces.
3beat egg whites until frothy and add baking powder, salt and cream of tartar.
4Beat into stiff peaks.
5Add sugar replacement, beating until well blended.
6Fold popcorn pieces into stiffly beaten egg whites.
7Drop by teaspoonfuls onto lightly greased cookie sheets.
8bake at 350°F for 12 to 14 minutes or until lightly browned.
9Yield 36 cookies.
