Blueberry spread

Ingredients:
1 tbspUnflavored gelatin (1 pkg)
1/3 cupCold water
3 cupBlueberries, lightly crushed
1/2 tspGround ginger
2 tbspGranulated sugar
4 tspLemon juice
1 tspGrated lemon rind
Procedures:
1In saucepan, sprinkle gelatin over water.
2Stir over low heat until gelatin is completely dissolved.
3Add blueberries, ginger, sugar, lemon juice and rind.
4Bring to a boil.
5Cover and cook 5 min or until fruit is tender; stir occasionally.
6Spoon into sterilized jars; cool slightly.
7Refrigerate several hours or until set.
8Store in refrigerator for up to 1 month or for 1 year in the freezer.
9Makes 2 cups.
10Preparation 10 min, cook about 5 min. strawberries - use orange rind, no ginger peach 2 cups, pear 1 cup, replace lemon rind with ?tsp nutmeg serving: 1 tbsp 1++ extra 2 g carbohydrate, 10 cal.
