Ingredients:
1 lbsChicken breasts, skinned &
-boneless
2 tspOlive oil
2 Shallots, thinly sliced
1/4 cupBell pepper, diced
1 tbspCurry powder or more taste
2 Limes, juice only
1/4 cupYogurt, plain, low fat
Parsley sprigs
1 tbspAlmomnds, slivered
Procedures:
1Cut chicken into thin slices.
2In a large non-stick skillet, heat oil and saute shallots until softened.
3Add bell pepper and cook until tender; stir in curry powder.
4Ad d chicken and stir fry until chicken is no longer pink.
5Add lime juice.
6Just before serving.
7Stir yogurt into the skillet.
8Garnish with parsley and almonds.
