Ingredients:

| lbs | Unsalted Butter, at room | | | -temperature | | 10
| tbsp | Sugar | | 1
| | Lemon, zest of | | 12
| med | Thai Basil Leaves | | 2
| | Egg Yolks | | 2
| cup | Flour | | 1
| pinch | Salt |

Procedures:
| 1 | Cream butter, sugar and lemon zest in the bowl of an electric mixer. | | 2 | Finely chop basil and add to creamed mixture. | | 3 | Add egg yolks; beat in well. | | 4 | Add the flour and salt. | | 5 | Mix until just incorporated. | | 6 | Put dough between sheets of plastic wrap and flatten into a 1" thick disc. | | 7 | Refrigerate overnight. | | 8 | (dough may be frozen at this point). | | 9 | roll out dough on a floured board to about 1/8" thickness. | | 10 | Cut into 2" rounds with a cookie cutter and place on parchment paper lined cookie sheets. | | 11 | Bake ina 350°F oven 10-12 minutes, or until lightly browned. | | 12 | Transfer to racks to cool. | | 13 | per cookie: calories: 130, protein: 1 g, carbohydrate: 13 g, saturated fat: 5 g, cholesterol: 38 mg, sodium: 13 mg. |
