Thai basil cookies

Ingredients:
1/2 lbsUnsalted Butter, at room
-temperature
10 tbspSugar
1 Lemon, zest of
12 medThai Basil Leaves
2 Egg Yolks
2 cupFlour
1 pinchSalt
Procedures:
1Cream butter, sugar and lemon zest in the bowl of an electric mixer.
2Finely chop basil and add to creamed mixture.
3Add egg yolks; beat in well.
4Add the flour and salt.
5Mix until just incorporated.
6Put dough between sheets of plastic wrap and flatten into a 1" thick disc.
7Refrigerate overnight.
8(dough may be frozen at this point).
9roll out dough on a floured board to about 1/8" thickness.
10Cut into 2" rounds with a cookie cutter and place on parchment paper lined cookie sheets.
11Bake ina 350°F oven 10-12 minutes, or until lightly browned.
12Transfer to racks to cool.
