Soft sugar cookies

Ingredients:
2 cupUnbleached Flour, Sifted
1/2 tspBaking Soda
1/2 tspSalt
1/4 cupShortening
1/4 cupButter Or Margarine
1 cupGranulated Sugar
1 largeEgg Yolk
1/2 cupButtermilk Or Sour Milk
1/2 tspVanilla Extract
1 largeEgg White
Procedures:
1Preheat the oven to 375 °F.
2Sift the flour, soda, and salt together, and set aside.
3Work the shortening and butter together, with a spoon, until fluffy and creamy.
4Add the sugar slowly, continuing to work until light.
5Then add the egg yolk and beat until light and fluffy.
6Add the flour mixture alternately with the buttermilk, beating well after each addition.
7Stir in the vanilla and then gently fold in the stiffly beaten egg white.
8Drop by rounded tablespoonfuls 3 inches apart on a greased cookie sheet.
9Flatten with a spatula to ?inch thickness.
10Bake in the preheated over for 20 minutes or until done.
11Makes 18 3-inch cookies.
