Soft pineapple cookies

Ingredients:
2 cupSugar
1 cupShortening ( crisco )
4 Eggs
1 tbspVanilla extract
Or
1 tbspCoconut extract
1 cupCrushed pineapple well
Drained
4 1/2 cupFlour
2 tspBaking soda
1/2 tbspSalt
1/2 cupFinely chopped nuts
Or
1/2 cupShredded coconut
Procedures:
1Cream sugar and shortening.
2Add egss one at a time to blend.
3Add drained pineapple and nuts.
4Comebine dry ingredients and add to creamed mixture.
5Blend into a stiff mixture.
6Drop by tbs.
7On a lightly gresaed cookie sheet a few inches apart.
8Bake 350 about 15 minutes or until browned at edges and appears set.
9Remove to racks to cool.
10Makes 3 to 4 dozen note: for those of you who dont know what crisco is: its a white solid vegetable fat with a creamy texture.
11When melted its used to fry things or left as is, its used for baking purposes.
