1 cupButter or margarine
3/4 cupBrown sugar, packed
3/4 cupSugar
2 Eggs
1 3/4 cupFlour
2 cupOats, uncooked
1 tbspCinnamon
1 tbspBaking soda
1/2 tbspSalt (opt.)
Topping:
1 tbspSugar
1 tbspCinnamon
Procedures:
1Heat oven to 375 degrees.
2Grease cookie sheet.
3In a large bowl, beat together butter, brown sugar and white sugar until light and fluffy.
4Add eggs; mix well.
5In a medium bowl, combine flour, oats, cinnamon, soda and salt.
6Add to sugar mixture; mix well.
7Drop by rounded teaspoonfuls onto prepared cookie sheet.
8In a small bowl, combine remaining 1 tbsp. sugar and 1 tsp. cinnamon; sprinkle lightly over each cookie.
9Bake 8 to 10 minutes.
10Cool 1 minute on cookie sheet; remove to wire cooling rack.
