Russian tea cakes (snowballs)

Ingredients:
1 cupSoft butter
1/2 cupSifted confectioners' sugar
1 tspVanilla
2 1/4 cupSifted All-purpose flour
1/4 tspSalt
3/4 cupNuts, finely chopped
Extra sifted confectioner's
Sugar for covering cookies
Procedures:
1Mix the butter, confectioner"s sugar, and vanilla, thoroughly together.
2Sift and stir in the flour, and salt.
3Then mix in nuts.
4chill dough.
5Roll into 1 inch balls.
6Place on ungreased baking sheet (cookies do not spread).
7Bake until set, but not brown.
8While still warm, roll in confectioner"s sugar.
9Cool.
10Roll in sugar again.
11temperature: 400f (mod hot oven).
12Time: bake 10 to 12 minutes.
13Amount: about 4 dozen, 1 ?inch cookies.
14note: when rolling dough into balls, use a light touch, and do not handle very long.
15The dough will get hard, and become almost rock-like after baking if you over-handle.
16this has been a family favorite for almost 30 years.
17Once you start eating them, you can"t stop.
