Ingredients:
2 tbspCanola oil
2 tbspButter, softened
1 cupDark brown sugar
1 largeEgg
2 tbspGrated lemon rind
1 1/4 cupAll-purpose white flour
1/4 cupCornstarch
2 tspGround ginger
1 tspGround cinnamon
1 tspBaking powder
1/2 tspBaking soda
1/4 tspSalt
1 tbspSugar, for sprinkling
Procedures:
1Preheat oven to 350.
2Prepare baking sheets with parchment paper or nonstick spray.
3Cream oil, butter, sugar, egg, and lemon rind with a mixer.
4Sift together flour, starch, spices and leaveners.
5Stir the dry mix into the creamed mix.
6Roll out to 1/16" thick, sprinkle with sugar cut out shapes and place onto baking sheets.
7Bake 10 min and let cool 2 min before moving from sheet to wire racks to finish cooling..
