Ingredients:

| oz | Pitted prunes | | 3
| tbsp | Hot water | | 2
| tbsp | Unsalted butter, at room temp | | 2
| tbsp | Canola oil | | 1 1/2
| cup | Fruit juice concentrate | | 1
| tbsp | Vanilla extract | | 3 1/4
| cup | Whole wheat pastry flour | | 1
| cup | Rolled oats | | 1
| tsp | Baking soda | | 1/2
| tsp | Salt |

Procedures:
| 1 | Prune puree replaces most but not all of the fat as some is required for taste and texture. | | 2 | Fruit juice concentrate is available at health food stores. | | 3 | spray two baking sheets with nonstick cooking spray or line with parchment paper. | | 4 | Preheat oven to 350. | | 5 | in a food processor combine the pitted prunes and hot water. | | 6 | Process until smooth. | | 7 | In a large bowl, whisk together prune puree, butter and oil until smooth. | | 8 | Gradually whisk in fruit juice concentrate and vanilla. | | 9 | in another bowl, stir together flour, rolled oats, baking soda and salt. | | 10 | Add the flour mixture to the prune mixture and blend. | | 11 | Drop by rounded spoonfuls onto the baking sheets and bake for 12 to 15 min. |
