Raw apple cookies

Ingredients:
1 lbsButter or margarine*
1 1/2 cupDark brown sugar
1 1/2 cupGranulated sugar
6 Eggs (large)
1 tbspVanilla
4 cupPeeled, diced apples**
1 cupRaisins or chopped walnuts
2 tspBaking soda
1 tbspCinnamon
1 tbspGround ginger
1 tbspGround cloves
6 cupAll purpose flour +/- 1 cup
Procedures:
1Note: this recipe is for a double batch.
2These cookies are so good one batch is never enough so i always make a double batch.
3* be sure to use regular margarine and not a spread.
4** any kind of apples can be used.
5preheat oven to 350 degrees.
6Spray cookie sheets with pam or baker"s secret or lightly grease.
7Cream butter or margarine and sugars.
8Add eggs, beating well after each addition.
9Add vanilla.
10Stir in baking soda, cinnamon, ground ginger and cloves.
11Stir in apples, nuts and raisins (if desired).
12Add the flour and mix well.
13i start with 6 cups of flour and according to the humidity level that day, i add up to an additional cup of flour.
14Drop by teaspoonful onto lightly greased cookie sheets.
15Bake at 350 °F for 10-12 minutes or until lightly browned.
