Lamb sirloin with hazelnut sauce

Ingredients:
1 lbsBoneless American lamb
- sirloin steaks
- cut ? thick
1 1/2 sliceWhole wheat bread
- (firm-textured)
- torn in small cubes
1/4 cupBeef broth
2 tbspApple juice or white wine
1/3 cupRoasted Oregon hazelnuts
2 Garlic cloves, minced
1 tbspWhite wine vinegar
1 tspOlive oil
1 dashGround red pepper
1 tbspFresh snipped parsley
1/4 tspSalt
1/4 tspGround black pepper
Whole Oregon hazelnuts

Procedures:
1In a small bowl, combine bread cubes, broth and apple juice.
2Let stand 5 minutes.
3In food processor or blender, grind hazelnuts.
4Add bread mixture, garlic, white wine vinegar, olive oil and red pepper.
5Process until smooth.
6Spoon into bowl and chill several hours.
7Sprinkle lamb steaks with salt and black pepper.
8Broil or grill four inches from heat for 3 to 5 minutes.
9Turn and broil or grill 3 to 5 minutes or until desired doneness.
10Stir parsley into sauce and serve with lamb steaks.
11Garnish with nuts, if desired.
