Ingredients:
1 cupShortening (part soft butter
-or margarine)
3/4 cupSugar
2 Eggs
1 cupMashed cooked carrots
2 cupFlour
2 tspBaking soda
1/2 tspSalt
3/4 cupShredded coconut
Procedures:
1These cookies are made with cooked carrots, so next time you prepare carrots for dinner, save a cupful for these moist golden cookies which stay soft for a long time, if you can keep them! mix shortening, sugar, and eggs thoroughly.
2Add carrots.
3Blend in flour, baking soda, and salt.
4Stir in coconut.
5Drop dough by the teaspoonful on lightly greased baking sheet about 2 inches apart.
6Bake in preheated 375f oven 8-10 minutes or until no imprint remains when touched lightly.
7Remove from baking sheet.
8Cool and frost with orange butter icing.
9Makes 5 dozen cookies.
