Ingredients:
3/4 cupButter
3/4 cupSifted confectioner sugar
2 tbspEvaporated milk
1 tspVanilla
1/4 tspSalt
2 cupFlour
FILLING:
1/2 lbsCaramels (about 30)
1/4 cupEvaporated milk
1/4 cupButter
1 cupConfectioners sugar
1 cupChopped pecans/peanuts
ICING:
12 ozSemi sweet chocolate
2/3 cupEvaporated milk
4 tbspButter
2 tspVanilla
1 cupConfectioners sugar
Procedures:
1Cream butter and add confectioners sugar.
2Add evaporated milk, vanilla and salt and mix well.
3Blend in flour.
4Chill.
5Roll out to about ?inch thickness.
6Cut into rectangles 3 x 1 ?inches.
7Put on ungreased cookie sheet about ?inch apart and bake at 325 °F for 12-16 minutes, until undersides are just starting to turn golden brown.
8Drop a teaspoon of filling on each cookie.
9When cool, drop a teaspoon of icing over the top.
10filling: melt caramels with evaporated milk in top of double boiler, stirring frequently.
11Remove from heat.
12Add butter and mix in. sift in confectioners sugar and mix in. add peanuts or pecans and mix well.
13Drop on top od cooled cookies.
14icing: melt chocolate bits with evaporated milk.
15Remove from heat.
16Add butter and vanilla and mix.
17Sift in confectioners sugar and mix well.
18Drop a teaspoonful over the top of cooled cookies.
