| lbs | Boneless lamb stew meat | | 1/4
| lbs | Bacon | | 4
| | Hamburger bun | | 4
| tbsp | Roquefort cheese | | | Mustard | | | Mayonnaise |

Procedures:
| 1 | Coarsely chop the bacon. | | 2 | Pass both bacon and lamb through a meat grinder fitted with a medium cutter. | | 3 | Scrape into a bowl, mix well and form into 4 patties. | | 4 | Place in the refrigerator, covered, to chill for 20 minutes. | | 5 | Heat a large heavy skillet to almost smoking. | | 6 | Add the patties, reduce heat to medium and cook 3 minutes. | | 7 | Turn and continue to cook 2 minutes more. | | 8 | Place a tablespoon dollop of cheese on each patty, cover and cook another 1-to-2 minutes. | | 9 | Remove the patties from the heat and place on hamburger buns. | | 10 | Serve immediately and offer mustard and mayonnaise |
