Lamb cheeseburgers

Ingredients:
2 lbsBoneless lamb stew meat
1/4 lbsBacon
4 Hamburger bun
4 tbspRoquefort cheese
Mustard
Mayonnaise
Procedures:
1Coarsely chop the bacon.
2Pass both bacon and lamb through a meat grinder fitted with a medium cutter.
3Scrape into a bowl, mix well and form into 4 patties.
4Place in the refrigerator, covered, to chill for 20 minutes.
5Heat a large heavy skillet to almost smoking.
6Add the patties, reduce heat to medium and cook 3 minutes.
7Turn and continue to cook 2 minutes more.
8Place a tablespoon dollop of cheese on each patty, cover and cook another 1-to-2 minutes.
9Remove the patties from the heat and place on hamburger buns.
10Serve immediately and offer mustard and mayonnaise
