Ingredients:
4 lbsUnripe Mangoes
2 cupChopped onions
2 cupRaisins
2 cupDried currants
4 cupWhite vinegar
4 cupBrown sugar
1 1/2 cupSugar, granulated
8 tbspChopped ginger
4 eachDried hot peppers, crumbled
2 eachLemon rinds
4 eachGarlic cloves
4 tbspMustard Seed
2 tbspSalt
4 tbspCinnamon
1 tbspTumeric
1/2 tbspGround cloves
1/2 tbspCayenne pepper
Procedures:
1Combine and let sit overnight.
2Bring to a boil stirring constantly, until the mangos and onions are transparent.
3Add water if necessary to prevent burning.
4Adjust flavor for hotness and tartness.
5Pack hot into half pints, process 5 minutes in boiling water bath.
