Hot & spicy pepper & apricot chutney

Ingredients:
1 1/4 lbsSweet red peppers cored
Seeded cut into ?inch
Dice (3 cups)
12 ozDried apricots cut into ?/td>
Inch dice
1 cupRaisins
1 largeOnion fine chopped
5 clGarlic thinly slivered
1 3-inch piece fresh
Gingerroot peeled and thin
Slivered (3 cup)
1 1/2 tspSalt
1 tspCumin seeds
1 1/2 tspCrushed red pepper flakes
3/4 tspMustard seeds
1 cupSugar
3/4 cupRed wine vinegar
Procedures:
1Combine sweet red peppers, apricots, raisins, onion, garlic, gingerroot, salt, red pepper flakes, cumin seeds, mustard seeds and sugar in large saucepan.
2Cook, uncovered, stirring occasionally, over medium heat until sugar dissolves, about 5 minutes.
3Add vinegar.
4Cook stirring often, until mixture is shiny and thick 30- 35 minutes.
5Cool.
6Cover and refrigerate.
