Ingredients:
1/2 Lemon
1 smallPiece fresh ginger ( 1 x ?/td>
-inch)
3 cupChopped nectarines or apples
1 Clove garlic
1/2 cupRaisins
1/3 cupPacked light brown sugar
1/4 cupCider vinegar
1/2 tspCurry powder
1/4 cupFlaked coconut
3/4 cupCream of coconut
Procedures:
1Remove any visible seeds from the lemon.
2Chop lemon to measure ?cup; set aside.
3Chop ginger until minced.
4Chop garlic until minced.
5Combine lemon, ginger, garlic, nectarines, raisins, brown sugar, vinegar and curry powder in medium saucepan; mix well.
6Bring to a boil; boil 2 minutes, stirring occaisionally.
7Cool.
8Add flaked coconut and cream of coconut; mix well.
9Cover chutney mixture; refrigerate overnight to allow flavors to blend
