Ingredients:
6 Lemons
1 1/2 cupWater
1/8 tspBaking soda
5 cupSugar
1 Pouch liquid pectin
Procedures:
1Remove peel from lemons; discard white membrane and cut rind into slivers.
2Section lemons, remove seeds, and chop pulp.
3Set aside.
4Combine rind, baking soda, and water in a saucepot.
5Cook, over medium high heat, until mixture boils, stirring frequently.
6Add sugar and reserved fruit, stirring well.
7Cook until mixture reaches a full, rolling boil, stirring occasionally.
8Boil hard 1 minutes.
9Remove from heat; stir in pectin.
10Skim foam.
11Let stand for 5 minutes, stirring occasionally to distribute fruit.
12Pour into hot jars, leaving ?inch (6 mm) head space.
13Adjust caps.
14Process 10 minutes in boiling water bath.
15Yield: about 4 half pints.
