Kwanzaa fried chicken

Ingredients:
1/4 cupHot sauce
1 tbspPrepared mustard
1 Whole chicken, cut into
-pieces
1 cupFlour
1 tbspCornmeal
1/4 cupBread crumbs
2 tspBiscuit mix
1 tspBaking powder
Salt and pepper to taste
Oil for frying
Procedures:
1Pour hot sauce and mustard into a bowl.
2Rub chicken pieces in hot sauce mix.
3Let stand for 10 minutes.
4Place flour, cornmeal, bread crumbs biscuit mix and baking powder in a plastic bag.
5Add salt and pepper to taste.
6Shake to mix.
7Drop chicken pieces into bag; shake to coat well.
8Preheat iron skillet on high heat, add oil to fill about half full.
9When oil is very hot, but not smoking, add chicken piceces: do not crowd.
10Cook on high heat until brown on one side.
11Turn pieces and lower heat.
12Cover and cook until almost crispy (10 to 15 minutes).
13Remove cover and let cook for three minutes before turning over and raising heat back up.
14Cook until crispy brown, about 3 minutes more.
15Drain on paper toweling.
16Makes 4 servings
