Ingredients:
1 cupJicama -- peeled and
Julienned
1 cupWatercress -- chopped
3 cupTorn red leaf lettuce
1/2 cupSliced radishes
2 tbspLime juice
1/4 cupTarragon vinegar
1 tbspHoney
1/2 cupSoft tofu
1 tspOlive oil
1 tspLow-sodium soy or tamari
Sauce
1 tbspStone-ground mustard
2 tspMinced parsley
1/2 tspChopped fresh thyme
1/2 tspMinced fresh basil
Procedures:
1In a large salad bowl, toss together jicama, watercress, lettuce, and radishes.
2In a blender puree lime juice, vinegar, honey, tofu, oil, and soy sauce until creamy.
3Stir in mustard, parsley, thyme, and basil, and pour over salad.
4Toss well and serve.
