Ingredients:
3 xEgg Yolks, beaten
3 tbspPrepared Mustard
10 clGarlic
2 xAnchovy Filets
6 xCapers
1 1/2 tspSalt
1/2 tspWhite Pepper
1/2 tspDried Oregano Leaves
15 dropTabasco Sauce
15 dropWorcestershire Sauce
Olive Oil
5 tbspWhite Vinegar
Procedures:
11) combine all dressing ingredients except olive oil in a blender using low speed.
2Maintain speed and add olive oil very slowly until mixture thickens and is the consistency of mayonnaise.
3Add vinegar and blend.
42) spoon into a glass jar, cover, refrigerate up to a week, using as needed.
53) for caesar salad, tear romaine lettuce into bite sized pieces.
6Toss with dressing then add freshly grated parmesan cheese, croutons and fried bacon bits to taste.
7Toss and serve.
