Ingredients:
1 lbsCan salmon, undrained
1 Egg
1 medOnion, finely diced
1 largeGreen pepper, finely diced
2 cupCooked tomatoes
1 1/2 cupBread crumbs
3 tbspButter
1 tbspParsley
1/2 tspSalt
1/8 tspPepper
1 tspChili powder
OPTIONAL
Sharp cheddar cheese
- (1-2 cups, shredded)
Procedures:
1Mix salmon and egg.
2Add finely diced onion and green pepper, tomatoes, butter, ?cup bread crumbs, parsley, salt, pepper, and chili powder.
3Simmer slowly in sauce pan 10 to 15 minutes.
4Turn into buttered casserole or individual dishes.
5Cover with remaining bread crumbs and bake in a moderate oven, 375 until crumbs are brown.
6Top with cheese.
7Serves
