Salmon corn scallop

Ingredients:
7 1/2 ozCanned Alaska salmon
1/2 cupChopped onions
1/4 cupChopped green peppers
3 tbspMargarine
1 1/4 cupCrushed water crackers
1 cupMilk
1 canCream-style corn
- (16 or 17 oz. can)
2 Eggs, slightly beaten
1 cupSharp Cheddar cheese
-(shredded)
1/4 tspBlack pepper
Procedures:
1Drain and flake salmon.
2Set aside.
3Saute onions and green peppers in 2 tablespoons margarine for 5 - 10 minutes, or until tender.
4Stir in flaked salmon, 1 cup cracker crumbs, milk, corn, eggs, cheese and pepper.
5Turn into an 8 x 8 x 2-inch baking dish.
6Melt remaining margarine; toss with remaining cracker crumbs.
7Sprinkle over casserole.
8Bake at 350°F for 30 minutes, or until knife inserted in center comes out clean.
